Honest Farming.

Exceptional Meat.

ABOUt

At our farm and on-farm butchery, we believe truly great meat begins with how animals are raised and how the land is cared for.
Using regenerative, close-to-nature farming methods, our livestock are raised slowly and naturally on pasture, with a strong focus on animal welfare, biodiversity, and soil health. We work with nature, not against it — producing food in a way that respects both the environment and the animals we care for.
Our farm-to-fork approach means every stage happens under our care, from raising livestock on our farm to expertly preparing each cut in our on-site butchery. This gives complete traceability, transparency, and confidence in the quality of the food we produce.
  • Regenerative and close-to-nature farming

  • Farm-to-fork traceability

  • High animal welfare standards

  • Traditional whole carcass butchery

  • Naturally produced, non-chemical products

  • Dry-aged beef for exceptional flavour and quality

  • Honest local food from people who care

We practise traditional whole carcass butchery, valuing and respecting the entire animal rather than focusing only on prime cuts. This approach reduces waste, supports sustainable food production, and allows customers to discover a wider range of flavourful, versatile cuts.
To develop exceptional depth of flavour and tenderness, our beef is carefully dry-aged as whole carcasses using traditional methods and time-honoured craftsmanship.
We are proud to produce food with:

From everyday family meals to special occasions, we are passionate about providing real food with integrity, provenance, and outstanding taste.
Thank you for supporting local farming, sustainable food production, and a more connected way of eating.

Meet the butcher

 Romain Fleureau

I joined Norton Court Farm in May 2026 with a clear mission: to build an authentic on-farm butchery rooted in transparency, quality, and traditional craft.
My journey to butchery hasn't been conventional. Before stepping behind the block, I worked as a cheesemaker and spent years in hospitality while travelling widely. Through every chapter of my career, one constant remained: an absolute passion for food, cooking, and exceptional raw ingredients.

Passion, Provenance, and the Art of Real Food

Scottish Craftsmanship Meets Farm-to-Fork

To master the trade in the truest way possible, I spent three years training in Scotland, working strictly with whole carcasses. That intensive experience allowed me to become fully qualified while developing unique recipes and products—all while upholding a strict commitment to clean, chemical-free food with 100% traceability.

My Mission at Norton Court Farm

  • Champion Whole-Carcass Butchery: Introducing you to incredible, lesser-known cuts that offer rich flavour and outstanding value.
  • Guarantee Pure Quality: Preparing clean meat free from artificial additives, chemical preservatives, or hidden fillers.
  • Be Your Cooking Partner: Sharing practical advice, cooking techniques, and recipe ideas so you get the absolute best out of every cut.
I want to help our community reconnect with real food. Eating well shouldn't be complicated, but it should be honest. My goal is to: .
